How to Make Taco Casserole in a Slow Cooker

The other day I got to thinking about one of my favorite oven recipesand I decided to get in the kitchen and develop a yummy version for the slow cooker. You guys… the Chili Cheese Fritos (not a sponsor) MAKE this dish. SOOO yummy!

Crock Pot Taco Casserole Notes

  • We used our Casserole Crock Pot for this dish but any regular 5-6 quart slow cooker should work just fine.
  • Next we used a can of pork and beans (and LOVED them) but you could substitute a can of chili beans.
  • Then we used a can of Mexicorn but you could use a can of regular corn if you can’t find it.
  • If you don’t like Chili Cheese Fritos, you could also use crushed Doritos or even a buttery cracker.

  • 1 lb ground beef browned and drained
  • 1 envelope Taco Seasoning
  • 1/2 cup water
  • 15 oz can pork and beans
  • 11 oz can mexicorn drained
  • 10.75 oz can cheddar cheese soup
  • 1 cup milk
  • 2 cups shredded cheese I used mozzarella
  • 2 cups Chili Cheese Fritos crushed

    I haven’t made this yet but I would use black beans drained cause I love them instead of pork n beans. Skip the milk in the cheese soup too. Should cut down on the soupyness.

    It’s in the crock pot cooking now and so no review just yet. But, I just couldn’t understand why there would be NO tomatoes utilized. At the moment, all I have are canned tomatoes, but it was all I could do to resist draining and tossing those in as well!

    No offense but I do not like using canned soups. I do enjoy your crockpot recipes and sometimes just sub broth for the cream chicken soup. But what can I substitute for the canned cheese soup? More cheese? Thx!

      No offense taken. We have many recipes that use soups and many others that do not because we have readers that both enjoy the convenience of using them and readers who do not like to use them.

      As for the recipe, any cheese sauce should work. So, if you have a homemade cheese sauce recipe, you could substitute it or you could just use cheese for a thicker texture. Hope that helps. Enjoy!

    We made this last night and it was pretty tasty. I drained off all juices and cut back water and milk to make it a little thicker but it was good. Thinking I might drain and add a can of Rotel next time. 🤔😊

    This is fantastic! A family favorite. I drained the beans and corn. Still plenty soupy…in a good way! Different ways to eat it. I liked over salad. The family liked as tortilla filling and then I even ate some over extra chili cheese chips. Super flavorful and just plain yummy! We eat every bit!

    I started this for the first time about an hour ago. I just watched the video. I didn’t realize how soupy it would turn out. I’m new to cooking in general and this is the second recipe I’ve tried in the crock pot. My question is, since I’ve already started it, is there anything i can do to make it thicker? I will like it over lettuce, but I doubt the boyfriend will. lol. And I am cooking it on high because I got it started late.

      Hi Robyn-
      Since it is already layered, there isn’t much you can do, BUT you can serve it with a slotted spoon and put it over lettuce or even in tortillas. Next time you could omit the milk to make it a little thicker. Hope that helps!

      I have my slow-cooker on high with the lid off I’m hoping to cook off some liquid… I cook for 6- 8 men and they would not eat it on Lettuce!!

    Sounds good Chris, but how would funny man rate this casserole ? 🙂 I usually can tell if a recipe is good by the way he samples it and raves about it…..so can you ask him, and let us know ? This would be an easy recipe for him to make on your show…..love his videos and how he is so involved in the recipes that you have him make…..

    This one I am going to try, because it is so simple…..and I love just plain simple recipes..can’t get much easier that this 🙂
    Rating it a 5* because I know it will be good…..I love tacos……and I do make a taco soup and it is delicious…….

    My daughter has made the stuffed pepper soup, (not in the crock pot), just regular pot and they love it….she makes it quite often.
