Mmmm this is super creative and sounds so delicious! Love the “marshmallow gravy”. Okay, this might be a super dumb question, but what exactly is marshmallow creme? Not sure if I’ve ever seen it. Is it like marshmallow fluff? Or more like marshmallow topping you find for ice cream and such? Or is it something completely different and I’m way off?

Thanks Chris! Marshmallow Creme and Marshmallow Fluff are the same thing. I was actually debating which term to use when I was writing this recipe today. I think I’ll go make a note in the recipe so that it is clear. Happy holidays 😀

We made this today on a whim and it was a crowd fav. The dish ended up back in the oven after we put the “gravy” on and it puffed up while remaining runny. I’m sure I’ll make these again next year.. Really nice way to serve sweet potatoes!

I’m planning on making this ahead of time and freezing it until thanksgiving, can I put the marshmellow topping on top and then freeze? Or just make the topping the day of?

I’ve never tried freezing this. I would make the marshmallow topping the day of, just to be on the safe side. The topping may get a little funky in the freezer.

I have made this three years running, I am now going to do away with the candy yams instead of having two types of dishes with sweet potatoes. My family loved it and called it a keeper!!

Does the marshmallow gravy “harden” ? I was thinking of serving it in a gravy boat for people to take as much as they want – several of our family don’t eat anything with sugar – bless their hearts!

FAQs

How do you make sweet potato casserole not watery? ›

If your sweet potato casserole turned out “watery”, its usually because you forgot to add eggs; you didn't let your casserole have enough time to set up after baking or you used fresh sweet potatoes and didn't boil them long enough before mashing.

How to tell if sweet potato casserole is done? ›

you should see it firm, but still paste like. Once it bulges and you start to see cracks, it will be overcooked. You don't need anything of those fancy gadgets for casserole! You can grab a potato masher or whisk and mash them up.

Why add eggs to sweet potato casserole? ›

Eggs help bind and lift the casserole for a light, set texture once baked. Sweet potato casserole can also be made without eggs, if needed.

Do you peel sweet potatoes before boiling for casserole? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

How do you keep sweet potato mash from getting watery? ›

Removing the water as steam makes room in the starch granule for the good stuff, the milk and cream. It also helps reduce the runny consistency. If you boiled them to cook them you might want to either steam them, bake them in the oven, or bake them in the microwave instead.

Why is my sweet potato casserole soupy? ›

It could be because the sweet potatoes were initially boiled rather than baked. Boiled sweet potatoes have a tendency to absorb water, which, in turn can make the casserole a little soupy.

How many sweet potatoes are 4 cups? ›

For cooking purposes, 1 pound of sweet potatoes equals about three medium whole, 2 cups mashed or 3½ to 4 cups chopped.

Is sweet potato casserole supposed to be liquidy? ›

It's hearty and satisfying.

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

How do you make a casserole taste better? ›

Fresh herbs or citrus zest can also punch up flavors with a bit of welcome brightness for a long-cooked dish, as can adding some heat in the form of a dash of hot sauce, a generous pinch of minced or sliced fresh chili pepper, or a shake of red pepper flakes.

What's the difference between sweet potato pie and sweet potato casserole? ›

The difference is that sweet potato casserole can either have a toasted marshmallow top or a crunchy brown sugar/nut top and is made with brown sugar in the casserole. Sweet potato pie is made with white sugar, has nothing on top, but can be served with whipped topping.

What tastes better boiled or baked sweet potatoes? ›

Baking whole sweet potatoes in the oven or cutting them into cubes and roasting them caramelizes the potatoes' starchy flesh, making it sweeter and giving it a silky smooth texture. Even if you are making mashed sweet potatoes, they will taste better with oven-cooked potatoes.

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

What to serve with sweet potato casserole? ›

I love to serve this sweet potato casserole as a side dish, alongside roasted turkey and chicken, glazed ham, and perfectly seared steaks. But since the flavors are reminiscent of pumpkin or sweet potato pie, this also makes an excellent dessert.

How do you remove excess water from sweet potatoes? ›

Freezing sweet potatoes drives excess water out of the potato, resulting in an interior with more concentrated flavor. Freezing also lowers the starting temperature of the potato, allowing more time for amylase enzymes to convert starch to sweet-tasting maltose.

How do you fix a casserole that is too dry? ›

If you've already cooked your casserole and find out it's too dry, another easy fix is to warm some broth and then pour it over the top of your casserole. Cover the dish with aluminum foil to prevent the liquid from evaporating and wait for 10 minutes or so before serving.

How do you add moisture to a casserole? ›

Pro Tip: Avoid Dry Casserole.

The best way to prevent it from drying out is to add a little bit of water, around ¼ cup, to the top of it. Allow the water to seep between the food and the sides of the baking dish. Cover with aluminum foil to seal in the moisture. What is this?
