BAKED POTATO IN A SOUP FORM

So coming back to this delicious potato soup.. the loaded twice baked potato at steakhouse and diners is what I have in my mind.. just in a more cozy homestyle meal format.

So this vegetable potato soup is a loaded baked potato made into a slurpy soup. Warm hug in a bowl that will satisfy the belly and soul at once.

Pro Tips

  1. For even cooking, make sure to chop your potatoes into roughly the same size. I prefer to make about 1 inch cubes.
  2. I also like to peel the skin of the potatoes for this soup. It’s personal preference so you can choose accordingly.
  3. If you prefer a smooth texture, need less chunky pieces, use an immersion blender to smooth out your soup at the end of cooking.
  4. This soup thickens further substantially. So you will need water or broth to thin it out when reheating.
  5. Similar to most potato dishes, I do NOT recommend freezing this soup. Texture won’t be the same and it won’t heat properly.
  6. It is very important not to over cook the potatoes. You want tender pieces that still have some bite to them. Otherwise it will become liquid mashed potatoes which won’t be fun.
  7. No need to use heavy cream to thicken the soup. Starchy potatoes cooked with milk are enormously creamy and velvety. So save those extra calories for dessert like Eggless Tiramisu or Chocolate Banana Bread instead.

WHAT TYPE OF POTATOES WORK BEST FOR POTATO SOUP?

Russet potatoes are best to use in this recipe. They have a high starch content and hold their shape well. Yukon gold potatoes are also good to use. I have not used Red potatoes to make this soup.

I also like to peel the potatoes before using. Since it’s a soup, the skin doesn’t blend in that well.

MAKING VEGAN, GLUTEN FREE, AND DAIRY FREE POTATO SOUP

It is easy to veganize vegetable soup recipes. Use certified gluten free flour and products to ensure gluten free recipe.

For a vegan and dairy free alternative, use plant based butter or just the cooking oil. Also use plant based milk like almond milk, soy milk or rice milk. And for cheese, choose nutritional yeast or vegan cheese alternative which is plant based cheese.

Make this Loaded Potato Soup gluten free by using certified gluten free all purpose flour. You can also substitute regular flour with rice flour, chickpea flour, or oat flour.

SERVING SUGEESTIONS:

This soup gives filling and satisfying feel by itself. You can serve it with munchies like Crispy Kale Chips, Roasted Chickpeas or Grilled Shish*to Peppers.

A crusty bread topped with bruschetta or olive tapenade will make it café style meal. Pair it with Air Fryer Naan Pizza for better than take out meal at home. You can also serve it with simple salad, lentil salad or quinoa tabbouleh to add more vibrant feel.

Creamy Potato Soup will stay in refrigerator for 4 days in glass containers. To reheat, add more broth or water since soup will be very thick.

INGREDIENTS

Exact measurements are listed in the recipe card below. Here’s what I used to make this soup in little more details.

Potatoes – For the Soups, always go for a starchy variety of Potatoes. I have mentioned below which varieties can be used to make this Soup.

Garlic and Onions – For homestyle soup flavor. You can also add celery and carrots if easily available.

Vegetable Broth – I use low sodium vegetable broth. It adds wonderful flavor to the soup since potatoes are cooked in it. You can use water if needed.

Milk and Flour– These ingredients make the soup rich, filling and creamy. I am using almond milk and gluten-free all purpose flour. Regular kinds also work.

Other Ingredients – You will need some oil to get the cooking started. If you want to make it WFPB – No oil, simply use water or broth instead. Salt and ground black pepper are used for flavoring. I like to add red pepper flakes for a hint of spice. You can add it according to your spice tolerance. Some fresh chives or green onions are perfect for that loaded potato soup feel.

Cheese : Optional but highly recommended. My favorite kind of cheese to use in this soup is Monterey Jack. You can also use cheddar. Choose plant based cheese or nutritional yeast for the vegan version.

FAQs

Why isn't my potato soup creamy? ›

Why isn't my potato soup creamy? Most creamy soups require you to add dairy of some sort into it. If you're finding your soup is too thin adding milk, add in cream instead, or whole milk.

How do you make cream of potato soup thicker? ›

Combine cornstarch and a little bit of water—or the chicken stock from the soup—in a small bowl. With the soup simmering over medium-low heat, whisk in the slurry. The soup should start to thicken almost immediately.

How do you keep potato soup from getting too thick? ›

I always dump half the tater water out and add whole milk to get the right consistency. Potatoes contain starch which is a natural thickening agent. Stop the cooking process right before it is the consistency you want it will thicken more.

Can I use instant potatoes to thicken potato soup? ›

Honestly, if you just stir in a little instant mash, like Smash, your soup will thicken up in no time at all. Now, you may end up needing more than a spoonful, but it's best to add a little at a time, because remember, you can always add more of it, but you can't take it away.

How can I make my soup more creamy? ›

The best options for thickening soup are cream or half and half. Plain yogurt or even freshly grated cheese works well and adds an extra layer of tangy, salty flavor. Add the dairy at the end and avoid bringing the soup to a boil since this can cause yogurt, cheese, or cream to split.

How do you doctor up bland potato soup? ›

Your potato soup is bland? Try adding a little more salt. That's usually the answer to any issue of blandness, no matter the recipe in question. A basic Appalachian style potato soup uses only a handful of simple ingredients, leaning on milk and water and often bouillon to create the brothy soup base.

Does adding heavy cream to soup make it thicker? ›

Heavy cream

Use heavy cream as a keto-friendly thickening option for your soups and broths. Heavy cream has more fat than regular whole milk, so you can add it to your soup recipes without worrying about it curdling.

Does milk thicken potato soup? ›

This is a traditional way to thicken potato soup. Simply remove some of the potatoes from your soup or you use freshly boiled potatoes. Mash the potatoes in a bowl and add milk, softened butter and salt and pepper to make a paste. Then add potatoes back into the soup.

What can I add to my potato soup to make it taste better? ›

The Best Potato Soup Topping
  1. Shredded sharp cheddar cheese.
  2. Crispy bacon.
  3. Finely chopped broccoli.
  4. Green Onions.

Will cream cheese thicken potato soup? ›

Cream cheese can be a delicious and tangy thickener for mashed potatoes so it stands to reason that it can also be used to add body to your favorite silky potato soup recipes — right? The answer is yes. It only works well if you do it carefully, though.

How do you blend potato soup without it being gummy? ›

For the best, balanced texture, use a potato masher to gently mash some of the boiled potatoes directly in the soup pot. If you need to use a food processor, only blend about ⅓ of the soup in short pulses to preserve some of those tasty potato chunks.

Why is my potato soup gluey? ›

If you've ever tried potato leek soup and found it to have a gluey texture, it's because the potatoes released too much starch from being over handled. This is unfortunately easy to do with a food processor or blender (heck, it can even happen when making mashed potatoes, which is why I avoid using an electric mixer).

What can I add to instant potatoes to thicken them? ›

Add a Thickening Agent

This is the most common way to thicken mashed potatoes. You can use what you have on hand: Flour, cornstarch, or powdered milk are all solid options that are probably already in your pantry.

Does sour cream thicken soup? ›

Another option for thickening soup is by using dairy like sour cream or yogurt. Start with a small dollop and stir before checking the consistency and adding more. We recommend using plain yogurt so you don't alter the taste of the soup. You can also use cream if you prefer.

Why aren't my potatoes getting soft in my potato soup? ›

It's best to use fresh, firm potatoes. Acidic Ingredients: If your soup contained highly acidic ingredients (e.g., tomatoes), it could have affected the texture of the potatoes. Acidic ingredients can slow down the softening process of potatoes.

Why is my potato soup mushy? ›

Like many of us chefs and home cooks, potatoes break down when overworked in the kitchen. While it might seem like merciless mashing would lead to a smoother soup, it actually has the opposite effect, creating a base that's more like gluey gunk.

Why does my potato soup look grainy? ›

So what do you do if you've made the mistake of using starchy potatoes in your soup? One trick to make your potato soup a little less grainy is to add some form of dairy –- cream, milk, or even cheese. Because dairy is generally creamy in texture, that characteristic will carry over into your soup. Crisis averted.

Why does my potato soup get watery? ›

The main reason your potato is not thickening is that it needs a heavier dairy product. Potato soup is cooked in a milk and chicken broth soup but heavy cream may need to be added. If your recipe calls for whole milk, mix in heavy cream instead or do half milk and have heavy cream.
