Made recipe as is & it was good. This year would like to try it with frozen green beans instead of canned. Do you think it will work with frozen? Is should I maybe thaw first? Or maybe microwave them some before putting in my 9×13 casserole slow cooker?Thank You

I haven’t tried this with frozen green beans but think it might work. I would definitely thaw them first. If you give it a try, let me know how it goes!

My casserole crockpot instructions specifically state to not put the casserole dish under the broiler. I’ve seen a few of your recipes that do just that. Won’t it damage or possibly crack the dish? Thank you!

      Hi Joan!

If your manufacturer says not to put it in the broiler, then I would recommend listening to what the manufacturer says. Mine does not. I have put mine in my broiler multiple times with no damage. It is usually an optional step. If you have a 6 quart slow cooker that is safe to put in the broiler, you could use it to make those recipes, if you want to use the broiler step.

Came out great! I doubled the recipe for my work function. Used french cut beans, added cheddar cheese, some spices (pepper, onion and garlic powders, cumin, parsley) mixed in some of the onions with the beans, and a little less milk because I like it creamier. Realized at 10am I Forgot to turn the crock pot on so I put it on high and it was boiling by 12 and perfect. Couldnt even tell it wasnt made in an oven.

I prefer the green bean casserole in the oven but I’m making Prime Rib this Thanksgiving and can’t use my oven while it’s cooking. Thank you for this terrific recipe!! By the way, believe it or not, I have two allergy-ridden children. One is allergic to chicken and celery, one is allergic to mushrooms, so I use cream of onion soup in my green bean casserole. Tastes delicious! 🙂

The original oven recipe calls for some of the onions to be mixed into the green beans. I would think that that would help to thicken it up a bit too.
There may also be a difference between using store brands and name brand soups.
I dislike mushroom so I use Cream of Chicken instead.

I’ve made this recipe in the crockpot for years. I double the recipe and I add American processed cheese you know the brand. I save the bean juice In case it gets to thick. It’s even better left over the next day.

How much processed cheese do you add? Do u put any fried onions in while it cooks or wait also to put on top when it is done cooking.

      Hi Channing!

I’m so sorry it turned out soupy! I did not have that problem when I made this recipe, so I can only guess at what happened. Did you drain your green beans completely? If you left no liquid in your green beans at all, and it was still soupy, then I would suggest taking the 1/3 cup of milk down to 1/4 cup of milk next time. I haven’t tried it this way, but that would be the only way to reduce down the liquid in this recipe that I could think of. Let me know how it goes!

      Hi Virginia!

I have never tried this recipe with fresh green beans, so I would hate to give a suggestion that I have not tested (or have tested something very similar) in my own kitchen and have something go terribly wrong. Enjoy!

I’m glad you posted this. I am taking green bean casserole to our family Thanksgiving meal. I didn’t think the 2 cans of green beans recipe I keep seeing would be enough. Not exactly sure how many people will be there (probably 15). I know there will be turkey, ham, dressing, mashed potatoes, deviled eggs, sweet potato casserole, cranberry sauce, rolls and a few deserts along with good ole southern sweet tea.

In your opinion, would you make this with 3 cans of green beans or 4?????
If 4, would I need to adjust the soup amount?????
I know there is a lot of other food but nothing else green. Also, I am using French Cut green beans.

Do you put “Cassie” in the oven at the end to brown the onions?????
I’m thinking that would be so good! I could have it ready except for adding the onions then put them on top and put in my niece’s oven just before serving.
    What temp and how long?????

I have the casserole crock but have never used it. This might be how it gets done! Thanks and Happy Thanksgiving to you and your family!

      Hi Kim!

I would just make this dish as is for your feast. With all the other foods there, people will be taking smaller portions of each dish, so I would think you should be good.

I haven’t tried putting it in the oven just after adding the onions, but if I were to, I would put it on broil (high if there is a choice of high or low) and watch it closely for 10-30 seconds. The onions should be browned in that amount of time and ready to go.

Happy Thanksgiving to you and yours!

When I do this recipe in a crock pot I brown my onions on a cookie sheet in the oven beforehand. Let cool and store in a ziploc baggie until you’re ready to sprinkle them on the casserole. Just leave the lid off so they don’t get soggy and you’re good to go.

FAQs

Are frozen or canned green beans better for casserole? ›

When I make green bean casserole, I skip canned beans all together. Frozen green beans are the best green beans to use for green bean casserole.

How do you make green bean casserole not soggy? ›

If you are finding that your green bean casserole is soupy, be sure to drain the green beans really well after blanching so you aren't getting extra water in the casserole that way. Then make sure to thicken the sauce properly by letting the chicken broth and half-and-half simmer long enough to thicken.

Can you overcook green bean casserole? ›

The Green Beans Are Mushy

Oftentimes, mushy green beans come down to one of two issues. The first is simply that you overcooked them, and they lost their shape and texture.

Why is green bean casserole so good? ›

Fans love the dish in part because of how simple it is to throw together. It calls for ingredients that could be found in a typical home kitchen pantry: canned or fresh green beans, mushroom soup, milk, soy sauce and black pepper.

Why is my green bean casserole so soupy? ›

Green bean casserole should have a nice thick sauce that coats the green beans—it should not resemble soup. One common cause of a watery casserole is not adding enough thickener, such as flour or cornstarch, to your sauce.

Should you rinse canned green beans before cooking? ›

Even if you are not concerned about sodium, in most cases it's a good idea to rinse canned beans. Rinsing beans can improve the flavor and texture of the final dish and can help cut down on how much gas they produce.

How many cans of green beans equals 4 cups? ›

✿ 4 cups of green beans is about 1½ pounds fresh or 16 ounces frozen or 2 cans (15 ounces each) drained.

Why do my green beans taste rubbery? ›

They are rubbery because people never cook them enough. Try cooking your beans thro and they will not only taste better, they will not squeak or bounce when you try to eat them.

How do I thicken my green bean casserole? ›

Add a thickener

While your green bean casserole is on the stove, incorporate a thickener into the vegetables, such as cornstarch or flour. According to The Kitchn, you can combine cornstarch and a small amount of water or broth in a cup and stir until the lumps are gone, and it becomes a thick yet drizzly consistency.

Is it safe to eat green bean casserole left out overnight? ›

According to the USDA, food that has been left out of the fridge for more than two hours should be thrown away. That's because between 40° F and 140° F (what the USDA calls the "Danger Zone"), bacteria grows incredibly fast and can make you sick.

Why is green bean casserole served on Thanksgiving? ›

It was originally marketed as an everyday side dish but became popular for Thanksgiving dinners in the 1960s after Campbell's placed the recipe on the can's label. The recipe popularized the combination of the soup with green beans.

Does green bean casserole make you gassy? ›

Yes green beans do cause gas but so does many other foods, such as eggs, cabbage, asparagus, broccoli, and other foods.

Are canned green beans less healthy than fresh? ›

Only have canned on hand? Don't worry — they're still nutritious. “Canned green beans have a similar nutrient content to fresh or frozen,” says Whitson. “But choose low-sodium varieties, or rinse them before cooking to remove any added salt.”

Which is better frozen green beans or canned green beans? ›

Green Beans: Depends

Sure, frozen green beans may be higher in nutrients than canned, but we feel the optimal choice depends on how you're going to utilize them. If you're serving them solo, frozen green beans are the way to go. If they're being added to a cooked dish or casserole, canned green beans are just as handy.

Do frozen green beans taste better than canned? ›

They don't have any added sodium, and they're also cooked a lot less. As a result, they come out of the oven with the perfect balance of flavor and texture. If you find your green bean casserole is turning out salty and mushy, those canned green beans might be to blame.

Is it better to can green beans or freeze green beans? ›

This one is totally your personal preference. Some folks prefer the taste and texture of canned beans, while others prefer frozen ones. Personally? I prefer frozen green beans as I think they have a fresher taste, and less nutrient loss.

Can I substitute frozen green beans for canned? ›

Frozen green beans are not as good as fresh, but they're miles better than canned ones and thus a decent compromise. The nice thing about frozen green beans is that they're quick frozen but not cooked, which means they retain their color—although their texture suffers a bit in the process of freezing and thawing.
